Frozen Mango Coconut Yogurt Bars

Ingredients
  

2 ripe mangoes, peeled and diced

1 cup coconut yogurt (dairy or non-dairy)

1 tablespoon honey or maple syrup (adjust sweetness to taste)

1 teaspoon vanilla extract

1/2 cup shredded unsweetened coconut

1/4 cup lime juice (freshly squeezed)

Pinch of salt

Optional toppings: diced mango, toasted coconut, lime zest

Instructions
 

Prepare the Mango: In a blender or food processor, combine the diced mango, coconut yogurt, honey or maple syrup, vanilla extract, lime juice, and a pinch of salt. Blend until smooth and creamy.

    Incorporate Coconut: Fold in the shredded coconut into the mango mixture gently using a spatula, ensuring even distribution without losing texture.

      Fill the Molds: Pour the mango-coconut mixture into silicone popsicle molds or a shallow baking dish for bars. If using a baking dish, spread the mixture evenly and smooth the top with a spatula.

        Add Toppings: If desired, sprinkle additional diced mango, toasted coconut, or lime zest on top for an extra layer of flavor and a beautiful presentation.

          Freeze: Insert sticks into the molds (if using popsicle molds), then place the molds or dish in the freezer. Allow the mixture to freeze for at least 4-6 hours, or until completely solid.

            Unmold and Serve: Once frozen, remove the yogurt bars from the molds by gently twisting the molds or running warm water over the outside of the dish. Cut into bars if using a baking dish.
