Ingredients

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 cups cream cheese, softened

1 cup Greek yogurt

1 cup mango puree (fresh or canned)

1/2 cup powdered sugar

Zest of 2 limes

Juice of 2 limes

1 teaspoon vanilla extract

1 cup heavy whipping cream

Extra mango chunks and lime slices for garnish (optional)

Instructions

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs with the melted butter. Stir until the mixture resembles wet sand.

Press the Crust: Divide the crumb mixture evenly among 10 serving cups, about 2 tablespoons in each. Use the back of a spoon to press it down firmly. Chill in the refrigerator while you prepare the cheesecake filling.

Mix the Filling: In a large bowl, beat the softened cream cheese until smooth. Add the Greek yogurt, mango puree, powdered sugar, lime zest, lime juice, and vanilla extract. Mix until all ingredients are well combined and the mixture is creamy.

Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mango cheesecake mixture until fully incorporated.

Fill the Cups: Spoon or pipe the mango cheesecake filling into each cup on top of the graham cracker crust, filling them to the top.

Freeze: Cover the cups with plastic wrap and freeze for at least 4 hours or until fully set.

Serve: Remove the cheesecake cups from the freezer about 10 minutes before serving. Garnish with extra mango chunks and a slice of lime on top if desired. Enjoy your refreshing dessert!
