Prepare the Mixture: In a mixing bowl, combine the mashed bananas, Greek yogurt, cocoa powder, honey or maple syrup, instant coffee granules, and vanilla extract. Mix until everything is thoroughly combined and smooth.

    Chill the Mixture: Cover the bowl with plastic wrap or a lid and place it in the refrigerator for about 30 minutes to an hour. This helps the mixture firm up for easier shaping.

      Shape the Truffles: Once chilled, use a small cookie scoop or your hands to form bite-sized balls with the mixture. Place them on a baking sheet lined with parchment paper.

        Freeze the Balls: Place the baking sheet with the truffles in the freezer for about 1-2 hours, or until they are firm and set.

          Melt the Chocolate: While the truffles are freezing, melt the dark chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between until completely melted and smooth.
