Ingredients

1 cup rolled oats

1/2 cup creamy peanut butter (or almond butter)

1/4 cup honey or maple syrup

1/4 cup unsweetened cocoa powder

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup chocolate chips (dark or milk)

Optional toppings: sliced bananas, chopped nuts, or shredded coconut

Instructions

Prepare the Muffin Tin: Line a muffin tin with silicone or paper liners to make it easier to remove the oat cups after freezing.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, unsweetened cocoa powder, and salt. Stir until well combined.

Combine Wet Ingredients: In a separate bowl, whisk together the creamy peanut butter, honey (or maple syrup), and vanilla extract until smooth and creamy.

Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry oat mixture. Stir thoroughly until all the oats are evenly coated and everything is well combined.

Add Chocolate Chips: Fold in the chocolate chips, ensuring they are distributed evenly throughout the mixture.

Fill Muffin Tin: Spoon the oat mixture into the prepared muffin tin, filling each cup to about three-quarters full. Press down firmly to compact the mixture.

Add Toppings (Optional): If desired, add toppings like sliced bananas, chopped nuts, or shredded coconut on top of each cup for extra flavor and texture.

Freeze: Place the muffin tin in the freezer and freeze for at least 2-3 hours, or until the oat cups are solid.

Serve: Once frozen, remove the oat cups from the muffin tin. Store in an airtight container in the freezer. Enjoy them directly from the freezer as a refreshing snack or dessert!
