Ingredients

2 cups frozen pineapple chunks

2 ripe bananas, sliced

1 cup coconut milk (or almond milk)

1 tablespoon honey (or maple syrup for vegan option)

1 teaspoon vanilla extract

1 tablespoon fresh lime juice

Optional toppings: shredded coconut, granola, fresh fruit, or chia seeds

Instructions

Blend the Base: In a blender, combine the frozen pineapple chunks, sliced bananas, coconut milk, honey, vanilla extract, and lime juice. Blend until smooth and creamy, ensuring there are no chunks.

taste Test: Before pouring into cups, taste the smoothie mixture and adjust sweetness or thickness if desired. If it's too thick, add a bit more coconut milk. If you want it sweeter, add more honey or maple syrup.

Prepare Cups: Choose silicone muffin cups or any freezer-safe cup or mold. Lightly spray with cooking oil for easier removal later.

Fill the Molds: Carefully pour the smoothie mixture into the prepared cups, filling them about three-quarters full to allow room for toppings.

Add Toppings: If desired, sprinkle your chosen toppings on each smoothie cup. Shredded coconut, granola, or a few pieces of fresh fruit work great!

Freeze: Place the cups in the freezer and allow them to freeze for at least 4 hours or until solid.

Serve: Once frozen, pop the smoothie cups out of the molds. You can let them sit at room temperature for a minute for easier removal. Enjoy instantly for a refreshing treat!
