Ingredients

2 cups fresh pineapple, chopped into small chunks

1 cup canned coconut milk (full fat for creaminess)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

½ cup shredded coconut (unsweetened)

Fresh mint leaves for garnish (optional)

A pinch of sea salt

Instructions

Blend the Base: In a blender, combine the chopped pineapple, coconut milk, honey or maple syrup, vanilla extract, and sea salt. Blend until you have a smooth and creamy mix.

Add Texture: Stir in the shredded coconut to the blended mixture, ensuring it is evenly distributed.

Prepare the Cups: If you want to use mini cups, jelly molds, or even ice cube trays, ensure they are clean and ready. Pour the mixture into the prepared molds, filling them about ¾ full to allow for expansion during freezing.

Freeze: Carefully place the molds in the freezer and let them freeze for at least 4 hours or until completely solid.

Unmold: Once frozen, remove the cups from the molds by gently warming the outside under lukewarm water for a few seconds. This will help release the cups without breaking them.

Serve & Garnish: Place the frozen cups on a serving platter and garnish with fresh mint leaves for a refreshing touch. Enjoy them right away for a cool tropical treat!
