1 cup pumpkin puree (fresh or canned)

1/2 cup cream cheese, softened

1/4 cup granulated sugar

1/4 cup brown sugar

1/2 teaspoon vanilla extract

1 teaspoon pumpkin spice mix (cinnamon, nutmeg, ginger)

1/4 teaspoon salt

1 package of mini phyllo pastry cups (15 cups)

Whipped cream (for topping)

Ground cinnamon (for garnish)

Instructions
 

Prepare the Filling: In a medium mixing bowl, combine the pumpkin puree, softened cream cheese, granulated sugar, brown sugar, vanilla extract, pumpkin spice mix, and salt. Mix well using a hand mixer or a whisk until the mixture is smooth and creamy.

    Preheat Oven: Preheat your oven to 350°F (175°C).

      Prepare the Phyllo Cups: Arrange the mini phyllo pastry cups on a baking sheet. Bake them in the preheated oven for about 3-5 minutes until slightly golden and crisp.

        Fill the Cups: Once the phyllo cups have cooled slightly, carefully spoon the pumpkin filling into each cup, filling them about three-quarters full to allow space for expansion when freezing.

          Freeze the Bites: Place the filled phyllo cups in the freezer. Let them freeze for at least 4 hours, or until completely firm.
