Frozen Raspberry Yogurt Bites

Ingredients
  

2 cups fresh or frozen raspberries

2 cups plain Greek yogurt (or your favorite yogurt)

2-3 tablespoons honey or maple syrup (adjust for desired sweetness)

1 teaspoon vanilla extract

A pinch of salt

Optional toppings: crushed nuts, shredded coconut, or mini chocolate chips

Instructions
 

Prepare Raspberries: If using fresh raspberries, rinse them gently under cold water. For frozen raspberries, allow them to thaw slightly, then drain any excess liquid.

    Blend the Mixture: In a blender or food processor, combine the raspberries, Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until smooth, ensuring any raspberry seeds are well incorporated.

      Taste and Adjust: Taste the mixture and adjust sweetness if needed by adding more honey or maple syrup. Blend again if any additional sweetener is added.

        Prepare the Molds: Line a mini muffin tin or silicone molds with cupcake liners, or use a silicone ice tray. This makes it easier to remove the bites once frozen.

          Fill the Molds: Pour the yogurt-raspberry mixture into the prepared molds, filling each cup about ¾ full.

            Add Toppings: If desired, sprinkle crushed nuts, shredded coconut, or mini chocolate chips on top of each bite for added texture and flavor.

              Freeze: Place the filled molds in the freezer and let them freeze for about 4-6 hours, or until completely solid.
