Frozen Strawberry Cheesecake Bars

Ingredients
  

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 cups fresh strawberries, hulled and sliced (reserve some for topping)

1 tablespoon lemon juice

1 teaspoon cornstarch

A pinch of salt

Instructions
 

Prepare the Crust:

    - In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well blended and the mixture resembles wet sand.

      - Press the crumb mixture firmly into the bottom of a lined 9x9 inch baking pan to form a crust layer. Use the back of a measuring cup to ensure an even surface.

        - Place the crust in the freezer while you prepare the filling.

          Make the Strawberry Puree:

            - In a blender, combine the hulled strawberries, lemon juice, cornstarch, and a pinch of salt. Blend until smooth.

              - Strain the mixture through a fine mesh sieve to remove any seeds if desired. Set aside.

                Prepare the Cheesecake Filling:

                  - In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy, about 2-3 minutes.

                    - Add in the vanilla extract and mix until combined.

                      - In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.

                        Layer the Cheesecake:

                          - Take the crust out of the freezer. Spread half of the cheesecake mixture over the crust, smoothing it evenly with a spatula.

                            - Pour half of the strawberry puree over the cheesecake mixture. Use a knife or skewer to swirl the puree gently into the cheesecake for a marbled effect.

                              - Spread the remaining cheesecake mixture over the top, followed by the rest of the strawberry puree. Swirl again if desired for a beautiful finish.

                                Freeze:

                                  - Cover the pan with plastic wrap and freeze for at least 4 hours, or until fully set.

                                    Serve:

                                      - Once the bars are set, remove from the freezer and let sit for about 10 minutes before slicing for easier cutting.

                                        - Garnish with fresh strawberry slices on top before serving. Cut into squares and enjoy!
