Ingredients

2 cups plain Greek yogurt

2 tablespoons honey (or maple syrup for vegan option)

1 teaspoon vanilla extract

1 cup mixed berries (blueberries, raspberries, strawberries - fresh or frozen)

1/4 cup shredded coconut (unsweetened)

1/4 cup chopped nuts (almonds, walnuts, or pecans)

A pinch of sea salt

Optional: mini chocolate chips or granola for extra toppings

Instructions

Prepare the Yogurt Mixture: In a medium mixing bowl, combine the Greek yogurt, honey, vanilla extract, and a pinch of sea salt. Stir well until the mixture is smooth and creamy.

Spread the Mixture: Line a baking sheet (about 9x13 inches) with parchment paper. Pour the yogurt mixture onto the prepared baking sheet and spread it out evenly to about 1/4-inch thickness.

Add Toppings: Evenly sprinkle the mixed berries, shredded coconut, and chopped nuts over the yogurt layer. If desired, add mini chocolate chips or granola for extra crunch and flavor.

Freeze: Place the baking sheet in the freezer and freeze for at least 4-6 hours, or until completely firm.

Break into Pieces: Once the yogurt bark is frozen, remove it from the freezer and lift the parchment paper to take the bark out. Break it into pieces of your preferred size.

Serve or Store: Enjoy immediately or store the pieces in an airtight container in the freezer for a refreshing snack anytime!
