2 cups fresh or frozen cherries, pitted

2 tablespoons honey or maple syrup

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch (optional, for thicker filling)

For the Yogurt Layer:

2 cups plain Greek yogurt (or your favorite non-dairy yogurt)

2 tablespoons honey or agave syrup (adjust to taste)

1 teaspoon vanilla extract

For the Crumble Topping:

1 cup rolled oats

1/2 cup almond flour or all-purpose flour

1/4 cup brown sugar or coconut sugar

1/2 teaspoon cinnamon

1/4 cup coconut oil or unsalted butter, melted

Pinch of salt

Instructions
 

Prepare Cherry Filling:

    - In a saucepan over medium heat, add the pitted cherries, honey or maple syrup, lemon juice, vanilla extract, and cornstarch (if using).

      - Stir and cook until the mixture starts to bubble and thicken, about 5-7 minutes. If using fresh cherries, they should start to release some juices.

        - Once thickened, remove from heat and let cool completely.

          Make the Yogurt Layer:

            - In a mixing bowl, combine the Greek yogurt, honey or agave syrup, and vanilla extract.

              - Stir well until smooth and fully combined. Adjust sweetness according to your preference.

                Prepare the Crumble Topping:

                  - Preheat the oven to 350°F (175°C).

                    - In a medium bowl, mix rolled oats, almond flour, brown sugar, cinnamon, and a pinch of salt.

                      - Pour the melted coconut oil or butter over the dry ingredients and mix until it resembles a crumbly texture.

                        - Spread the mixture on a baking sheet lined with parchment paper and bake for 10-12 minutes, or until golden brown. Allow to cool.

                          Assemble the Cups:

                            - In serving cups or small bowls, layer the cherry filling at the bottom, then add a generous layer of the yogurt mixture.
