1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

3 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 cup mini chocolate chips (optional)

For the Churro Coating:

1/2 cup granulated sugar

1 tablespoon ground cinnamon

1/4 cup unsalted butter, melted

For the Frozen Yogurt Filling:

2 cups plain Greek yogurt

1/2 cup powdered sugar (adjust for sweetness)

1 teaspoon vanilla extract

1/2 cup crushed cookies or toppings (such as sprinkles or crushed fruit, optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.

    Make the Cookie Dough: In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Gradually add this mixture to the wet ingredients, mixing until just combined. Fold in the mini chocolate chips, if using.

        Shape the Coins: Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly to form a coin shape.
