2 cups plain Greek yogurt

1 cup almond milk (unsweetened)

1/4 cup honey or maple syrup (adjust for sweetness)

1/4 cup cocoa powder

1 tablespoon instant coffee granules

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1 cup roasted almonds, chopped (plus whole almonds for topping)

1/4 cup dark chocolate chips (optional for topping)

Instructions
 

Prepare the Base: In a large mixing bowl, combine the Greek yogurt, almond milk, honey (or maple syrup), cocoa powder, instant coffee granules, vanilla extract, and sea salt. Whisk until smooth and fully combined.

    Add Almonds: Fold in the chopped roasted almonds evenly throughout the mixture. This will give a delightful crunch to every bite.

      Pour into a Pan: Line a 9x9-inch baking dish with parchment paper, allowing some overhang for easy removal later. Pour the yogurt mixture into the dish, spreading it evenly.

        Freeze: Cover the dish with plastic wrap and place it in the freezer. Freeze for at least 4-6 hours, or until solid.

          Cut into Bars: Once frozen solid, remove the dish from the freezer and lift the frozen block out using the parchment paper. Place it on a cutting board and cut into bars of desired size.

            Optional Chocolate Drizzle: If using, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Drizzle the melted chocolate over the bars before serving.
