Ingredients

2 cups rolled oats

1 cup Greek yogurt (plain or flavored)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/2 cup fruit jam (your choice: strawberry, raspberry, or blueberry work well)

Fresh fruit for topping (optional: sliced strawberries, blueberries, or banana)

Pinch of salt

Instructions

Prepare the Oat Mixture: In a mixing bowl, combine the rolled oats, yogurt, honey (or maple syrup), vanilla extract, cinnamon, and a pinch of salt. Mix until all the ingredients are well incorporated, and the mixture has a sticky consistency.

Shape the Bites: Line a muffin pan or silicone mold with parchment paper for easy removal. Spoon about a tablespoon of the oatmeal mixture into each mold, pressing down firmly to form a compact layer.

Add the Jam: Carefully drop a teaspoon of your chosen fruit jam in the center of each oatmeal base. Use a toothpick or a small spoon to swirl the jam slightly into the oatmeal, ensuring that it does not mix completely. This will create a delightful jam center.

Top with Oat Mixture: Cover the jam layer with another tablespoon of the oatmeal mixture, pressing down gently to ensure everything is snug.

Freeze: Place the muffin pan in the freezer for at least 3-4 hours or until the bites are completely frozen.

Serve: Once frozen, carefully remove the bites from the muffin pan and store them in an airtight container in the freezer. You can enjoy them straight from the freezer, or let them sit for a few minutes to soften slightly before biting in.

Add Fresh Fruit (Optional): For an extra touch, add a few fresh fruit slices on top just before serving.
