2 cups rolled oats

1 cup Greek yogurt (plain or flavored)

1 ripe banana, mashed

1/4 cup honey or maple syrup

1/2 cup almond butter (or any nut/seed butter of your choice)

1/2 cup mixed berries (fresh or frozen)

1/4 cup chopped nuts or seeds (optional)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon (optional)

Pinch of salt

Instructions
 

Prepare the Pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Mix the Wet Ingredients: In a large mixing bowl, combine the Greek yogurt, mashed banana, honey (or maple syrup), almond butter, vanilla extract, and salt. Stir until smooth and creamy.

      Incorporate the Dry Ingredients: Add the rolled oats, mixed berries, cinnamon (if using), and chopped nuts/seeds (if using) to the wet mixture. Stir until everything is thoroughly combined.

        Spread the Mixture: Transfer the oatmeal mixture into the lined baking dish, using a spatula to evenly spread and pack it down firmly.

          Freeze: Cover the dish with plastic wrap or foil and place it in the freezer for at least 4 hours or until the bars are completely firm.

            Cut into Bars: Once frozen, lift the mixture out of the pan using the parchment paper overhang. Place it on a cutting board and cut into bars of your preferred size.

              Store: Individually wrap the bars or store them in an airtight container separated by parchment paper. Keep them in the freezer and enjoy whenever you need a healthy snack!
