Ingredients

1 cup plain Greek yogurt

1 cup fresh pineapple chunks (or canned, drained)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

2 tablespoons chia seeds

A pinch of salt

Additional pineapple chunks for fun (optional)

Popsicle molds

Instructions

Blend the Base: In a blender, combine the Greek yogurt, pineapple chunks, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until smooth and creamy.

Add Chia Seeds: Once the mixture is smooth, stir in the chia seeds, allowing them to incorporate well throughout the yogurt mixture.

Layering (Optional): If you want extra pineapple bits in your pops, add a few small chunks of pineapple into the bottom of each popsicle mold before pouring in the yogurt mixture.

Pour Mixture: Carefully pour the yogurt and chia mixture into the popsicle molds, filling them up to the top. If your molds have a built-in stick, insert them now.

Freeze: Place the molds in the freezer and freeze for at least 4-6 hours, or until solid.

Remove Popsicles: When ready to enjoy, run warm water over the outside of the molds for a few seconds to loosen the pops. Gently pull the pops out.

Serve and Enjoy: Serve immediately and relish the tropical flavors of these refreshing pops!
