Frozen Yogurt Raspberry Chia Crunch Bars

2 cups plain Greek yogurt (or your favorite plant-based yogurt)

1 cup fresh raspberries (plus extra for topping)

1/4 cup honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1/4 cup chia seeds

1 cup granola (store-bought or homemade)

1/4 cup unsweetened shredded coconut

Pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare Your Pan: Line an 8x8 inch (or similar sized) square baking pan with parchment paper, leaving some overhang for easy removal later.

    Blend the Yogurt Mixture: In a large bowl, combine the Greek yogurt, raspberries, honey (or maple syrup), vanilla extract, and a pinch of salt. Using a fork or a hand mixer, mash the raspberries into the yogurt until well-combined but still chunky.

      Incorporate the Chia Seeds: Stir in the chia seeds to the yogurt mixture. These will provide a great source of texture and health benefits.

        Layer the Mixture: Pour half of the yogurt mixture into the prepared baking pan and spread it evenly using a spatula. Sprinkle half of the granola and half of the shredded coconut on top.

                Store Properly: Keep any leftover bars in an airtight container in the freezer for up to 2 weeks.
