Ingredients

2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup sugar

1 cup plain Greek yogurt

1 cup raspberry puree (fresh or frozen raspberries blended)

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 teaspoon almond extract (optional)

1/2 cup fresh raspberries for topping

Mint leaves for garnish (optional)

Instructions

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until the mixture resembles wet sand.

Shape the Coins: Take a large piece of parchment paper and place a round cookie cutter or a glass upside down. Press the crumb mixture into the bottom of the cutter to form a small disk. Remove the cutter and repeat until all the mixture is used. Refrigerate the crusts for about 20 minutes to set.

Make the Yogurt Filling: In a mixing bowl, whisk together the Greek yogurt, raspberry puree, honey (or maple syrup), vanilla extract, and almond extract until smooth and creamy.

Assemble the Coins: Spoon the raspberry yogurt mixture over the set graham cracker crusts, smoothing the top with a spatula.

Freeze: Place the assembled pie coins in the freezer for at least 4 hours, or until they are completely frozen.

Serve: Once frozen, remove the coins from the freezer and let them sit at room temperature for about 5 minutes to soften slightly. Top each coin with fresh raspberries and a mint leaf for garnish, if desired.

Enjoy: Serve immediately and savor the refreshing burst of raspberry and creamy yogurt in every bite!
