Frozen Yogurt Raspberry Swirl Pops

2 cups plain Greek yogurt

1 cup fresh raspberries

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

Optional: extra raspberries and mint leaves for garnish

Instructions
 

Prepare the Raspberry Sauce:

    - In a small saucepan over medium heat, add the fresh raspberries, honey (or maple syrup), lemon juice, and a pinch of salt.

      - Cook for about 5-7 minutes, stirring occasionally until the raspberries break down and the mixture becomes syrupy.

        - Remove from heat and let it cool slightly. You can strain the mixture through a fine mesh sieve if you prefer a smoother sauce but this step is optional.

          Combine Yogurt Base:

            - In a bowl, mix the plain Greek yogurt with vanilla extract and sweeten to taste with additional honey or maple syrup if desired. This will serve as your base.

              Layering in Popsicle Molds:

                - Fill the popsicle molds about 1/3 full with the yogurt mixture.

                  - Drizzle in 1-2 tablespoons of the raspberry sauce and use a skewer or knife to gently swirl it into the yogurt.

                    - Repeat the layers, alternating yogurt and raspberry sauce until the molds are filled, leaving a little space at the top for expansion during freezing.

                      Insert Sticks and Freeze:

                        - Insert popsicle sticks into the molds.

                          - Place the molds in the freezer for at least 4-6 hours, or until fully frozen.

                            Unmolding and Serving:

                              - When ready to serve, run the outside of the molds under warm water for a few seconds to help release the pops.

                                - Carefully pull the pops out, and if desired, garnish with extra raspberries and mint leaves.
