2 cups fresh strawberries, hulled and sliced

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 cup Greek yogurt (plain or vanilla)

1 cup heavy cream

1/2 cup sweetened condensed milk

1 teaspoon lemon juice

1 1/2 cups shortbread cookies, crushed

2 tablespoons unsalted butter, melted

Pinch of salt

Instructions
 

Prepare Strawberry Mixture: In a medium bowl, combine the sliced strawberries, granulated sugar, and vanilla extract. Let them sit for about 10-15 minutes to macerate, allowing the strawberries to release their juices.

    Blend Yogurt Base: In a large mixing bowl, combine the Greek yogurt, heavy cream, sweetened condensed milk, and lemon juice. Use a hand mixer or whisk vigorously until the mixture is smooth and creamy.

      Combine Strawberry and Yogurt: Gently fold the macerated strawberries, along with their juices, into the yogurt mixture until evenly incorporated.

        Prepare Shortbread Crust: In another bowl, mix the crushed shortbread cookies with the melted butter and a pinch of salt. Stir until the crumbs are coated and the mixture resembles wet sand.

          Layer the Bars: Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal. Press the shortbread mixture firmly into the bottom of the dish to form an even crust. Pour the yogurt-strawberry mixture on top and spread it out evenly.

            Freeze: Cover the baking dish with plastic wrap or foil and freeze for at least 4-6 hours, or until completely solid.
