2 large apples (Granny Smith or Honeycrisp work great)

1 cup plain Greek yogurt

2 tablespoons honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 cup granola (for crunch)

1/4 cup mixed berries (strawberries, blueberries, or raspberries)

Lemon juice (to prevent browning)

Prepare the Apples: Wash the apples thoroughly. Cut them into thin slices, about 1/4 inch thick, removing the core. To keep the slices from browning, lightly brush them with lemon juice.

    Make the Yogurt Mixture: In a medium-sized bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and cinnamon. Mix well until smooth and creamy.

      Stuff the Apple Slices: On half of the apple slices, spoon about 1-2 teaspoons of the yogurt mixture. Make sure to leave some space around the edges. Press another apple slice on top to create a sandwich.

        Add Granola and Berries: Sprinkle a little bit of granola and a few pieces of mixed berries on top of the yogurt before placing the second slice. This adds a delightful crunch and additional flavor.
