Ingredients

1 pound large strawberries

1 cup Greek yogurt (plain or flavored)

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1/4 cup granola (for topping)

Fresh mint leaves (for garnish, optional)

Instructions

Prepare the Strawberries: Wash the strawberries under cold water. Pat them dry with a paper towel. Carefully slice off the tops of the strawberries and scoop out a small portion of the insides using a small spoon or melon baller, creating a little cup. Set aside.

Mix the Yogurt Filling: In a medium bowl, combine the Greek yogurt, honey or maple syrup, and vanilla extract. Stir well until all ingredients are fully incorporated and the mixture is smooth.

Fill the Strawberries: Using a piping bag or a small spoon, fill each hollowed strawberry with the yogurt mixture. Be generous and fill them to the top.

Add Some Crunch: Sprinkle granola on top of the yogurt-filled strawberries for added texture and flavor.

Freeze the Strawberries: Place the stuffed strawberries in a single layer on a baking sheet lined with parchment paper. Freeze for at least 2 hours, or until fully set.

Serve: Once frozen, remove the strawberries from the freezer. Optionally, garnish with fresh mint leaves for a pop of color and flavor. Serve immediately and enjoy your refreshing treat!
