Ingredients

1 lb ground beef

1 cup frozen mixed vegetables (peas, carrots, and corn)

1 small onion, diced

2 cloves garlic, minced

1 cup beef broth

1 cup shredded cheddar cheese

1 teaspoon dried Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon Worcestershire sauce

2 cups cooked pasta (optional)

Fresh parsley for garnish

Instructions

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté for about 3-4 minutes, until the onion becomes translucent.

Brown the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Cook until it's browned, breaking it up with a spatula (approximately 5-7 minutes). Drain any excess fat.

Add Vegetables: Stir in the frozen mixed vegetables, and cook for another 3-4 minutes until they're heated through.

Season the Mixture: Add the beef broth, Worcestershire sauce, Italian seasoning, and season with salt and pepper to taste. Bring the mixture to a simmer and let it cook for about 5 minutes, allowing the flavors to meld.

Incorporate Pasta (Optional): If using pasta, stir it into the skillet gently until well combined. Let it heat through for an additional 2-3 minutes.

Cheesy Finish: Remove the skillet from heat and sprinkle the shredded cheddar cheese evenly over the top. Cover the skillet with a lid for about 2 minutes, or until the cheese has melted.

Garnish and Serve: Serve hot, garnished with fresh parsley for a touch of color and flavor. Enjoy your delicious cheesy beef medley!
