Ingredients

1 lb (450g) chicken breast, cut into bite-sized pieces

2 cups mushrooms, sliced (cremini or button mushrooms work well)

4 cloves garlic, minced

1/4 cup unsalted butter

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1/4 cup chicken broth

1/4 cup heavy cream (optional for extra creaminess)

Fresh parsley, chopped (for garnish)

Zest of 1 lemon (for brightness)

Instructions

Prepare Ingredients: Start by cutting the chicken breast into bite-sized pieces and slicing the mushrooms. Mince the garlic and set all ingredients aside.

Sauté Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, seasoning them with salt and pepper. Cook for about 5-7 minutes, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

Cook Mushrooms: In the same skillet, add the sliced mushrooms. Sauté for about 5 minutes, until they are tender and starting to caramelize. Add a pinch of salt to enhance their flavor.

Add Garlic and Herbs: Incorporate the minced garlic, dried thyme, and rosemary into the skillet with the mushrooms. Sauté for an additional 1-2 minutes until the garlic is fragrant.

Create the Sauce: Lower the heat to medium. Return the cooked chicken to the skillet and pour in the chicken broth. Mix everything together, allowing the broth to reduce slightly, about 2-3 minutes. If using heavy cream, stir it in at this stage for added creaminess.

Add Butter: Stir in the unsalted butter until it’s melted and well combined, creating a rich and flavorful sauce. Adjust seasoning with more salt and pepper if needed.

Finish & Serve: Remove from heat and sprinkle lemon zest and fresh parsley on top for a pop of freshness. Serve immediately over rice, pasta, or on its own, enjoying the savory garlic butter aroma.
