Garlic Butter Chicken Pasta

8 oz (225g) penne pasta

2 tbsp olive oil

1 lb (450g) boneless chicken breasts, cut into bite-sized pieces

Salt and black pepper, to taste

4 cloves garlic, minced

1/2 cup (115g) unsalted butter

1/2 cup (120ml) chicken broth

1/4 cup (60ml) heavy cream

1/2 cup (50g) grated Parmesan cheese

1 cup (150g) cherry tomatoes, halved

1 cup (100g) baby spinach

Fresh parsley, chopped (for garnish)

Red pepper flakes (optional, for heat)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Season chicken pieces with salt and black pepper. Add the chicken to the skillet and cook for 5-7 minutes or until golden and cooked through, stirring occasionally. Remove the chicken from the skillet and set aside.

      Prepare the Garlic Butter Sauce: In the same skillet, reduce the heat to medium, and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it. Add the butter and stir until melted.

        Build the Sauce: Pour in the chicken broth and heavy cream. Stir well, and let the mixture simmer for 2-3 minutes until slightly thickened. Gradually sprinkle in the grated Parmesan cheese, stirring continuously until it melts into the sauce.

          Combine Ingredients: Return the cooked chicken back to the skillet, along with the halved cherry tomatoes and baby spinach. Stir to coat everything in the sauce and let the spinach wilt, about 2 minutes. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.

            Mix with Pasta: Add the drained penne pasta to the skillet and toss gently until thoroughly combined and coated in the garlic butter sauce. Taste and adjust seasoning with additional salt, pepper, or red pepper flakes if desired.

              Serve: Plate the Garlic Butter Chicken Pasta and garnish with freshly chopped parsley. Enjoy warm!
