Garlic Butter Mushroom Pasta

8 oz (225g) spaghetti or fettuccine

2 tablespoons unsalted butter

2 tablespoons olive oil

3 cloves garlic, minced

8 oz (225g) cremini or button mushrooms, sliced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1/2 cup vegetable or chicken broth

1/4 cup heavy cream

1/4 cup freshly grated Parmesan cheese

2 tablespoons fresh parsley, chopped

Zest of 1 lemon (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Garlic and Mushrooms: In a large skillet over medium heat, melt the butter and olive oil together. Once hot, add the minced garlic and sauté for about 1 minute, or until fragrant. Be careful not to burn the garlic.

      Add the Mushrooms: Add the sliced mushrooms to the skillet. Season with salt, black pepper, and red pepper flakes (if using). Sauté for 5-7 minutes or until the mushrooms are tender and golden brown.

        Create the Sauce: Pour in the vegetable or chicken broth, scraping the bottom of the skillet to deglaze it. Allow the mixture to simmer for 2-3 minutes.

          Finish the Sauce: Lower the heat and add in the heavy cream, stirring to combine. Allow it to simmer for another 2-3 minutes until slightly thickened. Stir in the grated Parmesan cheese until melted and smooth.

            Combine with Pasta: Add the drained pasta to the sauce, tossing to combine. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.

              Serve: Remove from heat and stir in the chopped parsley and lemon zest (if using). Serve warm, garnished with additional Parmesan cheese and parsley if desired.
