1 pound of baby carrots (or regular carrots, peeled and cut into sticks)

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon honey or maple syrup

Salt and pepper, to taste

Optional: A squeeze of lemon juice for brightness

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prep the Carrots: If using regular carrots, wash and peel them. Cut them into sticks approximately 1/2 inch thick. For baby carrots, simply give them a rinse.

      Make Garlic Butter: In a small bowl, combine the melted butter, minced garlic, thyme, honey, salt, and pepper. Mix well until everything is nicely combined.

        Toss the Carrots: In a large mixing bowl, add the carrots and pour the garlic butter mixture over them. Toss until the carrots are evenly coated.

          Arrange on Baking Sheet: Spread the coated carrots on a baking sheet in a single layer. Make sure they are not overcrowded to achieve nice roasting.

            Roast the Carrots: Place in the preheated oven and roast for 20-25 minutes, stirring halfway through, until the carrots are tender and caramelized at the edges.
