Garlic Butter Shrimp Skewers

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh parsley, finely chopped

1 tablespoon fresh lemon juice

1 teaspoon paprika

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

6-8 wooden or metal skewers

Lemon wedges, for serving

Prepare the Skewers: If you’re using wooden skewers, soak them in cold water for at least 30 minutes to prevent burning on the grill. Metal skewers can be used straight away.

    Make the Garlic Butter: In a small saucepan, melt the butter over medium heat. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant but not browned. Remove from heat and stir in parsley, lemon juice, paprika, red pepper flakes, salt, and pepper. Set aside to cool slightly.

      Marinate the Shrimp: In a large bowl, add the shrimp and pour half of the garlic butter mixture over them. Toss to coat well. Let the shrimp marinate for at least 15 minutes to absorb the flavors.

        Skewer the Shrimp: Thread the marinated shrimp onto the skewers, leaving a little space between each shrimp for even cooking.

          Grill the Skewers: Preheat a grill or grill pan over medium-high heat. Grease the grill grates lightly. Place the shrimp skewers on the grill and cook for about 2-3 minutes on each side or until the shrimp are pink and opaque. Brush with the remaining garlic butter while grilling for extra flavor.

            Serve: Once cooked, remove the skewers from the grill, transfer to a serving platter, and drizzle with any leftover garlic butter. Serve with lemon wedges on the side for an extra zing.
