Ingredients

1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon paprika

1 teaspoon lemon zest

1 tablespoon fresh lemon juice

Salt and pepper, to taste

1/4 cup fresh parsley, chopped

8 slices of crusty bread (like sourdough or ciabatta)

1 cup shredded mozzarella cheese

Optional: Red pepper flakes, for heat

Instructions

Prepare the Shrimp: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Cook the Shrimp: Add the shrimp to the skillet, season with paprika, salt, and pepper, and cook for 2-3 minutes on each side until they turn pink and opaque.

Add Flavor: Once the shrimp are cooked, reduce the heat to low. Stir in the remaining butter, lemon zest, lemon juice, and chopped parsley. Mix until everything is well combined. Remove from heat.

Prepare the Bread: While the shrimp are cooking, preheat your oven to 400°F (200°C). Place the slices of crusty bread on a baking sheet.

Toast the Bread: Brush each slice with a little olive oil and toast in the preheated oven for about 5-7 minutes or until golden brown.

Assemble: Remove the toasted bread from the oven. Evenly distribute the garlic shrimp mixture over each slice.

Add Cheese: Top each shrimp toast with a generous amount of shredded mozzarella cheese.

Melt the Cheese: Return the baking sheet to the oven for an additional 5-7 minutes, or until the cheese is bubbly and melted to your liking.

Serve: Remove from the oven, sprinkle with additional parsley and red pepper flakes if desired, and serve immediately. Enjoy your delicious Garlic Butter Shrimp Toast Melts!
