Ingredients

1 lb sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

1 teaspoon fresh parsley, chopped

½ teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

1 tablespoon olive oil

Lemon wedges, for serving (optional)

Instructions

Marinate the Steak:

    - In a mixing bowl, combine the sirloin steak cubes with salt, black pepper, and a drizzle of olive oil. Toss well to ensure the steak is evenly coated. Let it marinate for at least 15 minutes at room temperature.

      Prepare the Garlic Herb Butter:

        - In a small saucepan over medium heat, melt 2 tablespoons of the unsalted butter. Once melted, add the minced garlic, fresh rosemary, thyme, parsley, and red pepper flakes if using. Cook for about 1-2 minutes, until the garlic is fragrant but not browned. Remove from heat and set aside.

          Sear the Steak Bites:

            - Heat a large skillet over high heat. Add the remaining 2 tablespoons of butter and allow it to melt and foam. Once the skillet is hot, add the marinated steak bites in a single layer, ensuring not to overcrowd the pan (you may need to do this in batches). Sear for about 2-3 minutes on each side for medium-rare, until they have a nice brown crust.

              Coat with Garlic Herb Butter:

                - Once the steak bites are cooked to your liking, remove them from the skillet and add them back into the pan. Pour the prepared garlic herb butter over the steak bites, tossing them lightly to coat each piece with the buttery herb mixture. Cook for an additional 1-2 minutes to combine flavors.

                  Serve:

                    - Remove from heat and transfer the garlic herb butter steak bites to a serving plate. Serve immediately with lemon wedges on the side for an extra burst of flavor.
