Garlic Parmesan Chicken and Potatoes (One-Pan Dinner)

For the Chicken:

4 boneless, skinless chicken thighs (about 1.5 lbs)

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

4 cloves garlic, minced (adjust for garlic lovers!)

For the Potatoes:

1.5 lbs baby potatoes (like Yukon Gold or red potatoes)

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon dried rosemary

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Rinse the baby potatoes and slice them in half or quarters if they are larger. In a mixing bowl, toss the potatoes with 2 tablespoons of olive oil, paprika, dried rosemary, salt, and pepper until well coated.

      Prepare the Chicken: In another bowl, combine the grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper. Coat each chicken thigh in the mixture, ensuring they are well covered.

        Sauté Garlic: In a large oven-safe skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.

          Add Potatoes: Carefully add the seasoned potatoes to the skillet with the garlic and toss them to coat in the oil.
