Garlic Parmesan Chicken Meatloaf – Cheesy & Flavorful

1 lb ground chicken

1 cup breadcrumbs

½ cup grated Parmesan cheese

1 small onion, finely chopped

3 cloves garlic, minced

2 large eggs

½ cup milk

2 tablespoons fresh parsley, chopped

1 teaspoon dried basil

1 teaspoon salt

½ teaspoon black pepper

1 cup shredded mozzarella cheese (for stuffing)

½ cup marinara sauce (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper for easy cleanup.

    Sauté Onions and Garlic: In a medium skillet over medium heat, sauté the chopped onion and minced garlic in a splash of olive oil until the onion becomes translucent. This usually takes about 3-5 minutes. Remove from heat and let it cool slightly.

      Mix the Meatloaf Ingredients: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, sautéed onion and garlic, eggs, milk, parsley, dried basil, salt, and black pepper. Mix everything together until just combined; be careful not to overmix!

        Prepare the Cheese Stuffing: In a small bowl, take the shredded mozzarella cheese and set it aside for the stuffing.

          Form the Meatloaf: On a clean surface, form the chicken mixture into a rectangular shape about ½ inch thick. Create a trough-like indentation in the center of the mixture, and fill it evenly with the shredded mozzarella cheese, then fold the sides over to encase the cheese, ensuring it’s well sealed.

            Shape and Transfer: Transfer the meatloaf to the prepared baking dish, shaping it into a loaf form. Ensure that the mozzarella is fully covered and won’t leak out during baking.

              Top with Marinara Sauce: Spread the marinara sauce evenly over the top of the meatloaf for added moisture and flavor.
