4 bone-in, skin-on chicken thighs

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped (plus extra for garnish)

1 tablespoon dried Italian herbs (oregano, basil, thyme)

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for a kick)

2 tablespoons olive oil

Zest of 1 lemon

1 tablespoon lemon juice

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) and lining a baking sheet with parchment paper or lightly greasing it with cooking spray.

    Prepare the Chicken Thighs: Pat the chicken thighs dry with paper towels. This helps achieve a crispy crust. Season them generously with salt and pepper on both sides.

      Create the Garlic Parmesan Mixture: In a large mixing bowl, combine the grated Parmesan cheese, panko breadcrumbs, minced garlic, fresh parsley, dried Italian herbs, black pepper, red pepper flakes (if using), and lemon zest. Mix everything thoroughly so the garlic and herbs are evenly distributed.

        Add the Olive Oil: Drizzle the olive oil over the breadcrumb mixture and mix until the breadcrumbs are evenly coated. This will help the crust become golden and crispy in the oven.
