Brussels sprouts, a member of the Brassica family (which also includes broccoli, kale, and cabbage), have an interesting history that dates back to ancient times. Thought to have originated in the Mediterranean region, they were cultivated in ancient Rome before making their way to Belgium, where they were named after the city of Brussels. By the 16th century, Brussels sprouts were well-established as a staple vegetable in European cuisine, particularly in Belgium and France.

Ingredients

1 lb fresh Brussels sprouts, trimmed and halved

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for a kick)

1/2 cup grated Parmesan cheese

1 tablespoon balsamic vinegar (for drizzling)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare Brussels Sprouts: In a large bowl, combine the halved Brussels sprouts with olive oil, minced garlic, salt, black pepper, and red pepper flakes. Toss well to coat evenly.

Roast the Sprouts: Spread the seasoned Brussels sprouts in a single layer on a large baking sheet. Make sure they are not overcrowded to allow them to roast and caramelize properly.

Add Cheese: Roast in the preheated oven for about 15 minutes. Then, remove the baking sheet, sprinkle the grated Parmesan cheese over the Brussels sprouts, and toss gently to distribute.

Continue Roasting: Return the baking sheet to the oven and roast for an additional 10-15 minutes, or until the Brussels sprouts are golden brown and crispy, and the cheese is melted (they should be tender with crispy outer leaves).

Drizzle & Garnish: Once done, remove from the oven and drizzle the balsamic vinegar over the Brussels sprouts. Garnish with freshly chopped parsley before serving.

Serve: Enjoy your Garlic Parmesan Roasted Brussels Sprouts as a delicious side dish to complement any main course!
