Garlic Parmesan Sweet Potato Spirals

2 medium sweet potatoes, peel on

4 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

¼ cup grated Parmesan cheese

Fresh parsley, finely chopped (for garnish)

Optional: a dash of red pepper flakes for heat

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: Using a spiralizer, create spiral shapes from the sweet potatoes. If you don’t have a spiralizer, you can also use a vegetable peeler to create ribbons or thin slices.

      Make Garlic Oil: In a small saucepan over medium heat, combine the olive oil and minced garlic. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

        Season the Spirals: In a large mixing bowl, toss the sweet potato spirals with the garlic oil, dried thyme, smoked paprika, salt, black pepper, and optional red pepper flakes until evenly coated.

          Arrange on Baking Sheet: Spread the seasoned sweet potato spirals out in a single layer on a baking sheet lined with parchment paper to prevent sticking.

            Roast: Place the baking sheet in the preheated oven and roast for about 20-25 minutes. Halfway through, use a spatula to toss the spirals for even cooking. The spirals should be tender and slightly crispy when done.

              Add Cheese: Remove the sweet potatoes from the oven and sprinkle the grated Parmesan cheese evenly over the spirals. Return to the oven for an additional 5 minutes, or until the cheese is melted and golden.
