Ingredients

1 cup Unsalted Butter (2 sticks)

1 cup Granulated Sugar

1/4 cup Packed Brown Sugar

1/4 cup Water

1/2 teaspoon Sea Salt

1 teaspoon Vanilla Extract

1 cup Semi-Sweet Chocolate Chips

1 cup Chopped Pecans (or walnuts)

1/4 teaspoon Sea Salt (for sprinkling on top)

Instructions

Prepare Your Pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later. Set aside.

Cook the Butter and Sugars: In a medium-sized saucepan over medium heat, combine the unsalted butter, granulated sugar, brown sugar, water, and 1/2 teaspoon of sea salt. Stir continuously until the mixture comes to a boil.

Boil Until Golden: Continue boiling without stirring, until the mixture reaches a deep amber color (about 300°F or 150°C on a candy thermometer). This should take approximately 10-15 minutes. Be attentive to avoid burning.

Add Vanilla: Once the desired color is achieved, remove the saucepan from heat and quickly stir in the vanilla extract. Be cautious, as the mixture will bubble up.

Pour Into Pan: Immediately pour the toffee mixture into the prepared baking dish, spreading it evenly. Allow it to cool for about 5-10 minutes until it firms slightly.

Add Chocolate: While the toffee is still warm, sprinkle the semi-sweet chocolate chips over the top. Allow them to melt for a minute, then use a spatula to spread the melted chocolate evenly across the surface.

Sprinkle Pecans: Immediately sprinkle the chopped pecans over the melted chocolate, pressing them gently into the chocolate for good adhesion. Finish with a light sprinkle of sea salt for that perfect balance of sweetness and saltiness.

Cool and Set: Allow the toffee to sit at room temperature until completely cooled and hardened. For a quicker set, you can place it in the refrigerator for about 30 minutes.

Cut and Serve: Once set, use the parchment overhang to remove the toffee from the pan. Cut into bite-sized pieces and enjoy!
