GERMAN POTATO SOUP

4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup heavy cream

2 tablespoons olive oil or butter

1 teaspoon caraway seeds (optional)

1 teaspoon smoked paprika

Salt and black pepper, to taste

3 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil (or butter) over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and caraway seeds, cooking for another minute until fragrant.

    Add the diced potatoes to the pot, followed by the smoked paprika, salt, and black pepper. Stir to coat the potatoes in the spices.

      Pour in the vegetable or chicken broth and bring to a boil. Once boiling, reduce heat to a simmer and cook until the potatoes are tender, about 15-20 minutes.

        Once the potatoes are cooked through, use a potato masher or immersion blender to mash the soup to your desired consistency—smooth or chunky.

          Stir in the heavy cream, adjusting the seasoning with more salt and pepper if needed. Allow the soup to warm through for another 5 minutes.

            Serve hot, garnished with sliced green onions and fresh parsley.
