2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 tablespoon ground ginger

1 tablespoon ground cinnamon

1 teaspoon ground cloves

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1 large egg

1 cup molasses

1 cup hot water

1 teaspoon vanilla extract

Optional: powdered sugar for dusting or cream cheese frosting for serving

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan, or line it with parchment paper for easy removal.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, baking soda, baking powder, ground ginger, cinnamon, cloves, nutmeg, and salt until well combined.

      Cream Butter and Sugar: In another large bowl, use an electric mixer to cream the softened butter and brown sugar together until light and fluffy, about 3-4 minutes.

        Incorporate the Egg and Molasses: Beat in the egg until well blended. Then pour in the molasses and vanilla extract, mixing until smooth.

          Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the butter-sugar mixture, alternating with the hot water. Start with the flour mixture, add half, then half of the hot water, mixing until just combined. Repeat with the remaining flour and water.

            Pour and Bake: Pour the batter into the prepared pan, smoothing the top with a spatula. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

              Cool the Cake: Once baked, remove the cake from the oven and let it cool in the pan for about 15 minutes. Then transfer it to a wire rack to cool completely.

                Serve: Once cooled, dust with powdered sugar, or spread cream cheese frosting if desired. Cut into squares and enjoy!
