Ingredients
  

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon ground ginger

½ teaspoon ground nutmeg

¼ teaspoon ground cloves

½ teaspoon salt

¾ cup brown sugar, packed

½ cup unsulfured molasses

½ cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk (or milk with 1 tablespoon vinegar added)

½ cup chopped walnuts (optional)

½ cup raisins or cranberries (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, and salt until well combined.

      In another bowl, mix the brown sugar, molasses, vegetable oil, eggs, and vanilla extract until smooth.

        Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined. Be careful not to overmix.

          Pour in the buttermilk and stir until the batter is well incorporated. If desired, fold in the chopped walnuts and raisins or cranberries.

            Divide the muffin batter evenly among the prepared muffin cups, filling each about 2/3 full.

              Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

                Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
