2 cups all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

2 large eggs

2 cups buttermilk (or milk mixed with 1 tablespoon vinegar)

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

For the Breakfast Filling:

6 strips of crispy bacon

4 large eggs

Salt and black pepper, to taste

1/2 cup shredded cheddar cheese

Fresh chives or parsley, for garnish (optional)

For Assembly:

Maple syrup, for drizzling

Extra butter, for greasing the waffle iron

Preheat your waffle iron: Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease the grill plates with butter.

    Make the waffle batter: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, combine the eggs, buttermilk, melted butter, and vanilla extract until well blended. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix. The batter should be slightly lumpy.
