1 cup polenta

4 cups water (or vegetable broth for added flavor)

1 teaspoon salt

1 tablespoon olive oil (plus more for frying)

½ teaspoon garlic powder

½ teaspoon smoked paprika

¼ teaspoon black pepper

½ cup grated Parmesan cheese (optional for extra richness)

Fresh herbs (like rosemary or thyme) for garnish

Dipping sauce of choice (like aioli or marinara)

Prepare the Polenta: In a large pot, bring the 4 cups of water (or vegetable broth) to a boil. Stir in the salt, then gradually whisk in the polenta. Reduce heat to low and continue to whisk until the mixture thickens, about 5-7 minutes.

    Flavor the Mixture: Once thickened, stir in the olive oil, garlic powder, smoked paprika, black pepper, and grated Parmesan cheese (if using). Mix well to combine all flavors.

      Set the Polenta: Pour the polenta into a greased baking dish or lined baking sheet, spreading it evenly to a thickness of about ½ inch. Smooth the top and let it cool at room temperature for about 30 minutes or refrigerate for 1-2 hours until firm.

        Cut into Fries: Once the polenta is firm, turn it out onto a cutting board. Use a sharp knife to cut the polenta into fry-shaped pieces—about ½ inch wide.

          Fry the Polenta: In a large skillet, heat enough olive oil over medium-high heat to cover the bottom of the pan. Once hot, add the polenta fries in batches, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy.

            Drain and Season: Remove the fries with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Sprinkle with additional salt, fresh herbs, or any desired seasonings right away, while still hot.
