Golden Parmesan Herb Chicken Noodle Casserole

3 cups cooked egg noodles

2 cups rotisserie chicken, shredded

1 cup broccoli florets (fresh or frozen)

1 cup mushrooms, sliced

1/2 cup grated Parmesan cheese, plus extra for topping

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

1 cup chicken broth

1/2 cup milk

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced mushrooms; sauté for about 3-4 minutes or until the mushrooms are tender. If using fresh broccoli, add it to the skillet and cook for an additional 2-3 minutes. Remove from heat.

      Prepare the Sauce: In a medium bowl, whisk together the softened cream cheese, chicken broth, and milk until smooth. Add the onion powder, thyme, basil, oregano, salt, and pepper. Mix in the grated Parmesan cheese until well combined.

        Combine the Ingredients: In a large mixing bowl, combine the cooked egg noodles, shredded rotisserie chicken, sautéed vegetables, and cheese sauce. Stir until everything is well coated.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish. Spread it out evenly. Sprinkle the shredded mozzarella and extra grated Parmesan on top.

            Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.

              Garnish and Serve: Once out of the oven, allow the casserole to cool for about 5 minutes. Garnish with fresh chopped parsley before serving.
