2 medium zucchinis

1 cup grated Parmesan cheese

1 cup breadcrumbs (panko for extra crunch)

1 tsp garlic powder

1 tsp onion powder

½ tsp dried oregano

½ tsp paprika

Salt and pepper to taste

Prepare the Zucchini: Preheat your oven to 425°F (220°C). Wash and dry the zucchinis. Slice them into thin rounds, about 1/8 inch thick. Use a mandoline slicer for uniform thickness if you have one.

    Set Up Breading Station: In one bowl, beat the eggs. In another bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, oregano, paprika, salt, and pepper.

      Bread the Zucchini: Dip each zucchini round into the beaten eggs, allowing excess to drip off. Then, coat it with the Parmesan breadcrumb mixture, pressing lightly to ensure the coating adheres well. Place the coated chips on a baking sheet lined with parchment paper.

        Spray and Bake: Once all the zucchini rounds are breaded, lightly spray them with olive oil for additional crispiness. Bake in the preheated oven for 20-25 minutes, flipping them halfway through, until golden brown and crispy.
