2 medium zucchinis

1 cup grated Parmesan cheese

1 cup seasoned breadcrumbs (Italian-style if possible)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

2 tablespoons olive oil or cooking spray (for baking)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare the Zucchini: Wash the zucchinis and slice them into thin rounds, about 1/4 inch thick. For extra crispiness, you can also sprinkle them lightly with salt and let them sit for 10-15 minutes. This will draw out excess moisture. Pat them dry with paper towels.
