1 cup grated Parmesan cheese

1 cup breadcrumbs (Panko for extra crunch)

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Olive oil spray (or regular olive oil)

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare Zucchini: Wash and slice the zucchinis into 1/4-inch thick rounds. Make sure they are evenly sliced for consistent cooking.

      Set Up Breading Station: In three separate bowls, prepare your coating stations. In the first bowl, beat the two eggs. In the second bowl, mix together the breadcrumbs, half of the Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper. In the third bowl, place the remaining Parmesan cheese.

        Coat the Zucchini Rounds: Take a zucchini slice, dip it in the beaten egg, ensuring it’s well-coated, then transfer it to the breadcrumb mixture. Press gently to ensure the crumbs adhere. Finally, lift it and sprinkle some extra Parmesan cheese on top. Arrange the breaded slices on the prepared baking sheet. Repeat until all zucchini slices are coated.
