For the Chicken Meatballs:

1 lb ground chicken

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped fresh parsley

2 cloves garlic, minced

1 small onion, finely chopped

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

1 large egg

Zest of 1 lemon

For the Lemon Orzo:

1 cup orzo pasta

2 cups chicken broth or water

2 tablespoons olive oil

Juice of 1 lemon

Salt and pepper, to taste

Fresh dill or parsley, for garnish (optional)

Preheat the oven: Preheat your oven to 400°F (200°C).

    Prepare the meatballs: In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, garlic, onion, oregano, salt, pepper, egg, and lemon zest. Mix well until all ingredients are combined.

      Form the meatballs: Shape the mixture into small meatballs, about 1 to 1.5 inches in diameter. Place them on a lined baking sheet, ensuring they are spaced apart for even cooking.
