1 cup orzo pasta

2 cups vegetable broth or water

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1 bell pepper (red or yellow), diced

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Cook the Orzo: In a medium pot, bring the vegetable broth (or water) to a boil. Add the orzo pasta and cook according to package instructions until al dente (about 8-10 minutes). Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: While the orzo cooks, chop the cherry tomatoes, cucumber, red onion, and bell pepper. Place the chopped vegetables in a large mixing bowl.

      Combine Olives and Feta: Add the sliced Kalamata olives and crumbled feta cheese to the bowl with the vegetables. Toss gently to combine.
