Green Beans, Potatoes, & Bacon Side Dish

Ingredients
  

1 pound fresh green beans, trimmed

2 cups baby potatoes, halved

4 slices of thick-cut bacon, chopped

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 6-8 minutes. Remove the bacon with a slotted spoon and set aside on a paper towel to drain excess fat. Leave about 1 tablespoon of bacon grease in the skillet.

    Sauté the Onions: In the same skillet, add the diced onion and cook over medium heat until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Boil the Potatoes: While the onions are cooking, bring a pot of salted water to a boil. Add the halved baby potatoes and cook until fork-tender, about 10 minutes. Drain and set aside.

        Add Green Beans: Once the onions and garlic are ready, add the trimmed green beans to the skillet. Sauté for 4-5 minutes until they are bright green and slightly tender.

          Combine Ingredients: Stir in the cooked potatoes, crispy bacon, olive oil, smoked paprika, salt, and pepper. Toss everything together gently and cook for an additional 3-4 minutes, allowing the flavors to meld.

            Serve: Remove from heat and garnish with chopped fresh parsley. Serve warm as a delightful side dish.
