Green Chili Breakfast Quesadilla

4 large flour tortillas

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup cooked and crumbled breakfast sausage (or chorizo)

1/2 cup fresh green chilies, diced (mild or spicy as preferred)

1/2 medium onion, finely chopped

2 cloves garlic, minced

1/2 cup fresh cilantro, chopped

1/4 teaspoon ground cumin

Salt and pepper, to taste

2 tablespoons olive oil

Salsa and sour cream, for serving

Prep the Filling: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent (about 3-4 minutes). Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Add the Meat and Chilies: To the skillet, add the cooked breakfast sausage (or chorizo) and diced green chilies. Season with ground cumin, salt, and pepper. Stir everything together and let it heat through for about 2-3 minutes. Remove from heat and fold in the fresh cilantro.

      Assemble the Quesadillas: Lay a tortilla flat on a clean surface, and sprinkle half of it with a portion of the shredded cheddar and Monterey Jack cheeses. Next, add a generous amount of the sausage and green chili filling on top of the cheese. Finally, sprinkle more cheese on top and fold the tortilla in half to create a semi-circle.

        Cook the Quesadillas: In the same skillet (or a clean one), heat the remaining tablespoon of olive oil over medium heat. Place the folded quesadilla in the skillet and cook until golden brown on one side (about 3-4 minutes). Carefully flip and cook the other side until golden brown and the cheese is melted (another 3-4 minutes). Repeat with remaining tortillas.

          Cut and Serve: Once cooked, remove the quesadillas from the skillet and let them cool for a minute. Cut each quesadilla into wedges. Serve hot with salsa and sour cream on the side.
