Grilled BBQ Chicken Quesadillas

2 cups cooked chicken, shredded (preferably BBQ-flavored)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup cooked corn (canned or frozen)

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 cup BBQ sauce (your favorite brand or homemade)

4 large flour tortillas

2 tablespoons olive oil

1 teaspoon paprika

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

Sour cream (for serving)

Salsa (for serving)

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, cheddar cheese, Monterey Jack cheese, corn, red onion, cilantro, BBQ sauce, paprika, black pepper, and garlic powder. Stir until all ingredients are well incorporated.

    Heat the Griddle: Preheat a large skillet or griddle over medium heat. Add 1 tablespoon of olive oil and let it warm up.

      Assemble the Quesadillas: Place one tortilla on a clean surface. Spoon about 1 cup of the chicken filling onto one half of the tortilla. Fold the other half over to create a half-moon shape. Repeat this process with the remaining tortillas and filling.

        Grill the Quesadillas: Carefully transfer the folded quesadilla to the heated skillet. Grill for about 3-4 minutes on one side until the tortilla is golden brown and crispy. Use a spatula to carefully flip the quesadilla and add the remaining tablespoon of olive oil to the skillet. Grill the other side for another 3-4 minutes.
